Grilled BBQ Pork, Goat Cheese and Arugula Pizzas

Ingredients

  • 1 Smithfield® Sweet and Smoky Pork Roast
  • 1 large red onion, sliced into rings
  • 1 bottle BBQ sauce, divided
  • 1/2 cup apple cider vinegar
  • 4 (7- to 8-inch) prepared pizza crusts
  • 8 oz. crumbled goat cheese
  • 1/2 cup arugula

Directions

  1. Combine pork roast, onion, 1/2 cup BBQ sauce and vinegar slow cooker. Cover and cook on High for 4 hours. Remove pork and onions from slow cooker using a slotted spoon. Pull pork and mix with 1 tablespoon BBQ sauce.
  2. Once pork is ready, heat charcoal or gas grill for indirect cooking at about 350°F.
  3. Spread 1 to 2 tablespoons BBQ sauce onto each pizza crust; crumble goat cheese evenly between pizzas. Top each with about 1 cup pulled pork.
  4. Grill pizzas over indirect heat for 3 to 5 minutes or until the cheese has melted. Remove pizzas from grill; top with arugula and serve.
