Pork & Potato Main Salad

Ingredients

  • 1 Smithfield® Roasted Garlic and Cracked Black Pepper Pork Tenderloin and potatoes (reserved from Grilled Pork & Potato Planks recipe)
  • 1 cup diced red onion
  • 1/2 cup mayonnaise
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon prepared mustard
  • 1 1/2 teaspoons dried rosemary
  • 4 large Romaine lettuce leaves

Directions

  1. Combine onion, mayonnaise, oil, vinegar, mustard and rosemary in a large bowl.
  2. Coarsely chop the pork tenderloin and potatoes reserved from the Grilled Pork & Potato Planks recipe; stir into the mayonnaise mixture. Season with salt and pepper to taste.
  3. Spoon equal amounts of salad on lettuce leaves to serve.
